I realize that I never finished the reviews I started in this post a couple weeks ago. I only posted 2 of the 3 reviews I had intended to post. Since then I've tried a couple more recipes from Pinterest and thought I would share my results from those as well. For now, let's dive right into the best one we've tried so far:
Alice Springs Chicken
(picture from the blog with the recipe--amysfinerthings.com)
This one is loaded with chicken, cheese, and bacon--what's not to love, right? ;) It was fairly simple to prepare. I cheated and used bacon pieces instead of freshly cooked bacon, b/c I was short on time. It would have probably been even better with the fresh bacon and bacon grease, but it was still really yummy with my little short cut.
Every member of my family ate this without complaint. That in and of itself would lead me to remake this recipe, but add to that Pete and I both thought it was delicious and we've definitely found a winner! Seriously, try this recipe folks. You won't regret it.
Tonight we tried another chicken dish from Pinterest. It's titled Cracker Barrel Grilled Chicken Tenderloins, but it's more braised than grilled. But let's not nit-pick, let's get to the review:
Cracker Barrel Grilled Chicken Tenderloins
(again, the pic is from the blog: ahensnest.com)
This recipe is quite simple, which you know bodes well with this girl. I stuck the chicken in a ziplock bag with the honey, lime juice and italian dressing, then unloaded the dishwasher, sliced up a sweet potato to bake as a side and set the table all before the chicken was ready to cook. I can't remember any super exciting quotes from anyone tonight, but there were NO complaints, everyone liked it. I was expecting it to be a little sweeter, but it was still quite good. And did I mention it was easy? This will definitely get back on the menu at our house.
Let me know if you try these or any other great new recipes. I get so bored with menu planning and am always on the lookout for something new. :)
